Potato Technique as in Five Start Hotels!
Dear students,
Do not separate NEET, JEE Coaching from your regular board preparations. After all both competitive examinations include of STD 11 and STD 12 portions. There is a method called “Potato Technique” adopted in Five Star Hotels in order to keep ready stock of Food menu to customers.
In five-star hotels, the “potato technique” is often used to ensure efficient kitchen operations and maintain high standards of service for large volumes of guests. It involves preparing and storing potato dishes in advance while maintaining their quality. Here’s how it’s commonly done:
1. Pre-Cooking:
- Blanching: Potatoes are par-cooked (boiled or steamed) until just tender but not fully cooked. This preserves texture and reduces cooking time during service.
- Roasting/Grilling: Partially roasted or grilled potatoes are stored for quick finishing later.
2. Storage:
- Cooling: Cooked potatoes are rapidly cooled using ice baths or blast chillers to maintain freshness.
- Vacuum Sealing: Pre-cooked potatoes are vacuum-packed to prevent oxidation and spoilage.
- Refrigeration/Freezing: Stored at appropriate temperatures depending on the time frame for use.
3. Reheating and Finishing:
- Potatoes are reheated and finished just before serving using ovens, grills, or stovetops, ensuring they taste fresh and retain their texture.
- Final touches like butter, herbs, or sauces are added during the finishing stage.
4. Presentation:
- High-end plating techniques are employed to ensure aesthetic appeal.
This approach ensures consistent quality, reduces preparation time during peak hours, and minimizes food waste.
